Hardiquest is renowned for his use of luxury ingredients, from oysters to premium cheeses, and for reinventing classic Belgian dishes. One of his signatures is a reinterpretation of the Belgian classic ‘tomates-crevettes’ (tomatoes with shrimps). Hardiquest serves the shrimps (from the Belgian North Sea) raw, with a jelly of tomato and caviar.

Hardiquest joins awarding-winning Dubai chef Himanshu Saini at Trèsind Studio. Together they have curated an exclusive collaborative degustation menu, which they will offer over two days, from 25 to 26 June at Trèsind Studio as part of Trèsind Studio’s Culinary Journey series. The set menus are priced at AED695 per person (excluding drinks) and tickets to the sold out within three hours, with the second seating, added by popular demand, also selling out within minutes.
