Dubai restaurant Ossiano to host 'Asia's Best Female Chef' winner

Chef Grégoire Berger to cook with acclaimed Thai masterchef for one night only

Bookings are now open for a AED1,600 ‘10-wave’ menu created by acclaimed chef Grégoire Berger, the visionary behind the Michelin-starred Dubai restaurant Ossiano, and the multi-award-winning chef Pam Pichaya Soontornyanakij (pictured) of Potong in Bangkok – ranked 17 in the list of Asia’s 50 Best Restaurants, and a previous winner of the Asia's Best Female Chef award.

The collaboration will take place on Tuesday 21 May at Ossiano, located within Atlantis, The Palm. The duo will craft a menu inspired by a five-element philosophy: salt, acid, spice, texture and the Maillard reaction (the chemical process of reducing sugars to create a distinctive flavour).

Hero dishes from Grégoire will include langoustine tom yum uni, Galician sea urchin and sticky rice with mango and curry ice sorbet. Meanwhile, Chef Pam will showcase ‘Parts of Banana’, with ingredients sourced from Bangkok, ‘Potong’s Pad Thai’ and ‘Evolution of Crab’, featuring mud crab, known for its creamy roes, and blue crab, offering a sweet and rich flavour.

Chef Pam is the first-ever and youngest female chef to receive both a Michelin star and the ‘Opening of the Year’ award from the Michelin Guide simultaneously. She is also the youngest Thai female chef to receive ‘Asia’s Best Female Chef’ award from the World's 50 Best Restaurants. As a critically acclaimed chef, food consultant and television personality, Chef Pam is one of the most recognised faces in cooking in Thailand today.

Since its opening in 2021, Potong, a progressive Thai-Chinese restaurant helmed by Chef Pam and housed in her parents' old pharmacy, the culinary star has earned a reputation for skilfully weaving her family's stories into a thought-provoking tasting menu featuring the five elements and five senses across 20 dishes, while spotlighting Thai-Chinese cuisine with creative spins on traditional recipes. 

Meanwhile, Grégoire, the visionary behind Ossiano, has made his mark as “he pays homage to ocean treasures and coastal flavours” from his many travels.

Earlier this year, Ossiano ranked third in the 2024 Middle East & Africa’s 50 Best Restaurants list as well as ranking number 87 in The World's 50 Best Restaurants 2023 extended list. Ossiano also retained its Michelin star in Dubai's 2023 Michelin guide and earned its place in La Liste in November 2023 at number eight, scoring 96%, the highest score in the UAE.
