Seabourn cruise line announces new fine dining experience

Solis will launch on Seabourn Quest in January 2024

Seabourn has announced the next chapter in its award-winning culinary experiences with the debut of Solis, a new fine dining venue that celebrates Mediterranean cuisine inspired by the places visited by the line’s ultra-luxury ships. 

With the addition of Solis, Seabourn will end its eight-year culinary partnership with chef Thomas Keller in Spring 2024.

The new restaurant will launch on Seabourn Quest in January 2024, and will be rolled out across Seabourn Encore, Seabourn Ovation and Seabourn Sojourn by Spring 2024.

Solis was developed in collaboration with long-time Seabourn partners Anton Egger and Franck Salein. Previously, chef Salein has cooked at multiple two- and three-Michelin-starred restaurants.

Featured dishes will include green asparagus and avocado salad; Basque piquillo peppers with fresh Murcia goat milk cheese served on country bread crostini; whole sea bass baked in a sea salt and fresh thyme crust served with artichokes and tomatoes; Tuscan-style grilled beef porterhouse steak, and spiced lamb shank with chargrilled smoked eggplant with tahini, pomegranate, roasted pine nuts and labneh. 

Vegetarian and vegan options will also be incorporated into the menu.
