Norway’s only three-Michelin-star restaurant will join forces with Ossiano for one night only
Led by chef Gregoire Berger, fine-dining seafood restaurant Ossiano, located at Atlantis, The Palm, is set to kickstart its 2023 programme of culinary collaborations.
Its first guest chef is from three-Michelin-starred Maaemo in Norway. For one night only, Danish chef Esben Holmboe Bang will unleash his "emotionally led menu" on the city.
Taking place on Thursday 23 February, the 10-course menu, called 'North', will be priced at AED1,500 per person and feature a fusion of the best French and Norwegian produce available.

The collaboration is part of the new chef-driven Dubai World Cuisine movement, launched by Gulfood, which aims to provide a platform for UAE-based chefs to shape the cultural identity of Dubai and establish the city as a global culinary capital.
Maaemo was awarded its third Michelin star in 2016, making Esben the first chef in Norway to front a three-star restaurant. His contributions on the night will include gently cooked king crab shoulder paired with a chilled broth of smoked reindeer heart.

At just 36, Chef Berger has already made waves on the global culinary stage with his cutting-edge French cuisine. The youngest and only chef in the country to be featured in the top 100 in the Best Chef Awards for five consecutive years, one-Michelin-starred Ossiano was also ranked 4th in the Middle East & Africa’s 50 Best Restaurants 2023, making it the highest new entry.
The chef Gregoire Berger X chef Esben Holmboe Bang 'North' menu will be served after a day of demonstrations and masterclasses at Top Table, in the 28th edition of Gulfood, the largest annual food and drink sourcing event in the world.
